You make no mention of an alternative solution to the creation of a new state netween Jordan and Israel: The 2022 Saudi-based Hashemite Kingdom of Palestine solution which calls for the merger of Jordan, Gaza and part of Judea and Samaria (West Bank) and all their respective inhabitants into one new territorial entity - to be goverened by Jordan's current Hashemite dynasty.
This solution (ex Gaza) would involve Israel and Jordan redrawing their existing international border and I believe could be achieved within a matter of months.
Strangely the United Nations and the international media have refused to even acknowledge the existence of this solution even though it was authored by an adviser to Saudi Crown Prince Mohammed Bin Salman.

The Palestinian claim to statehood is not based on the principle that every ethnic group deserves its own state (that would lead to international chaos), but on the principle that every person deserves to be a citizen of some state.
You suggest a Palestinian state is not viable because the two territories of which it would consist are not contiguous. Well, the reason for that is that Israel has interposed itself between those two territories. If you don’t think a Palestinian state consisting of Gaza and the West Bank is viable, fine, just annex both territories and make all of the inhabitants into Israeli citizens.
This happened around 1964 so Jordan still governed the West Bank and Was Jerusalem - incidentally, having ethnically cleansed the Jews from that part of the land in 1948.
